Health, dietary and taste concerns, along with ethical motives, are steering some consumers towards organic products. However, most are still only partial, occasional consumers. These "intermittent" organic consumers give us an insight into the complexity and variability of dietary practices. The author looks at how they make choices and offers a pragmatic and microsociological analysis of dietary habits, as regards switching and stabilization processes, thus defending the "routine reflexivity" theory. A study of the role of alternative sales systems in these consumers' choices shows how confidence is built up and highlights the political aspects of food consumption.
