However, since the mad cow disease crisis, they have also been good examples of sites whose organization is governed by contemporary risk management regulations. The need to balance public health and profit is forcing professionals to rethink their practices and relations. Based on a survey of abattoir workers, the author sets out the realities of the work done and social relations in abattoirs, which the general public knows little about. He contributes to the debate on the recent changes in public policy on risk management.
