Avec l’émergence des notions de comportement à risque et de durabilité alimentaire, les pratiques alimentaires et leurs évolutions sont devenues des enjeux cruciaux pour la santé et l’environnement. Depuis le début du XXIe siècle, les programmes d’éducation à l’alimentation et les dispositifs d’information des consommateurs se sont multipliés en France. Pourtant, l’évaluation de leurs effets réels reste délicate, car les changements de comportements alimentaires résultent de facteurs multiples, difficiles à mesurer. C’est précisément pour mieux aborder cette complexité que le Collectif interdisciplinaire de recherche sur les changements de comportements alimentaires (Circca) propose de nouveaux axes de recherche, associant les apports des sciences expérimentales, des sciences numériques, et des sciences humaines et sociales : neurosciences, psychologie cognitive, sociologie, épidémiologie nutritionnelle, économie expérimentale, modélisation comportementale... Cet ouvrage engage une réflexion méthodologique visant à appréhender de manière multidimensionnelle les changements de comportements alimentaires, à travers la présentation de différents travaux de recherche, pour certains interdisciplinaires. Il s’adresse aux étudiants et aux chercheurs s’intéressant aux questions de comportements alimentaires, quelle que soit leur discipline.
<div>With the emergence of concepts such as risky behavior and food sustainability, eating habits and how they're changing have become crucial issues for health and the environment. Since the beginning of the XXI(sup)st(/sup) century, food education programs and consumer information initiatives have multiplied in France. However, assessing their real effects remains difficult, as changes in eating habits result from multiple factors that are hard to measure. It is precisely to better address this complexity that the Interdisciplinary Research Collective on Changes in Eating Behaviors (Circca) is proposing new areas of research, combining contributions from the experimental sciences, digital sciences, and the humanities and social sciences: neuroscience, cognitive psychology, sociology, nutritional epidemiology, experimental economics, behavioral modeling, and more.</div><div>This book engages in methodological reflection aimed at understanding changes in eating behaviors in a multidimensional way, through the presentation of various research projects, some of which are interdisciplinary. It is intended for students and researchers interested in issues related to eating behaviors, regardless of their discipline.</div>

Avec l’émergence des notions de comportement à risque et de durabilité alimentaire, les pratiques alimentaires et leurs évolutions sont devenues des enjeux cruciaux pour la santé et l’environnement. Depuis le début du XXIe siècle, les programmes d’éducation à l’alimentation et les dispositifs d’information des consommateurs se sont multipliés en France. Pourtant, l’évaluation de leurs effets réels reste délicate, car les changements de comportements alimentaires résultent de facteurs multiples, difficiles à mesurer. C’est précisément pour mieux aborder cette complexité que le Collectif interdisciplinaire de recherche sur les changements de comportements alimentaires (Circca) propose de nouveaux axes de recherche, associant les apports des sciences expérimentales, des sciences numériques, et des sciences humaines et sociales : neurosciences, psychologie cognitive, sociologie, épidémiologie nutritionnelle, économie expérimentale, modélisation comportementale... Cet ouvrage engage une réflexion méthodologique visant à appréhender de manière multidimensionnelle les changements de comportements alimentaires, à travers la présentation de différents travaux de recherche, pour certains interdisciplinaires. Il s’adresse aux étudiants et aux chercheurs s’intéressant aux questions de comportements alimentaires, quelle que soit leur discipline.
<div>With the emergence of concepts such as risky behavior and food sustainability, eating habits and how they're changing have become crucial issues for health and the environment. Since the beginning of the XXI(sup)st(/sup) century, food education programs and consumer information initiatives have multiplied in France. However, assessing their real effects remains difficult, as changes in eating habits result from multiple factors that are hard to measure. It is precisely to better address this complexity that the Interdisciplinary Research Collective on Changes in Eating Behaviors (Circca) is proposing new areas of research, combining contributions from the experimental sciences, digital sciences, and the humanities and social sciences: neuroscience, cognitive psychology, sociology, nutritional epidemiology, experimental economics, behavioral modeling, and more.</div><div>This book engages in methodological reflection aimed at understanding changes in eating behaviors in a multidimensional way, through the presentation of various research projects, some of which are interdisciplinary. It is intended for students and researchers interested in issues related to eating behaviors, regardless of their discipline.</div>

Avec l’émergence des notions de comportement à risque et de durabilité alimentaire, les pratiques alimentaires et leurs évolutions sont devenues des enjeux cruciaux pour la santé et l’environnement. Depuis le début du XXIe siècle, les programmes d’éducation à l’alimentation et les dispositifs d’information des consommateurs se sont multipliés en France. Pourtant, l’évaluation de leurs effets réels reste délicate, car les changements de comportements alimentaires résultent de facteurs multiples, difficiles à mesurer. C’est précisément pour mieux aborder cette complexité que le Collectif interdisciplinaire de recherche sur les changements de comportements alimentaires (Circca) propose de nouveaux axes de recherche, associant les apports des sciences expérimentales, des sciences numériques, et des sciences humaines et sociales : neurosciences, psychologie cognitive, sociologie, épidémiologie nutritionnelle, économie expérimentale, modélisation comportementale... Cet ouvrage engage une réflexion méthodologique visant à appréhender de manière multidimensionnelle les changements de comportements alimentaires, à travers la présentation de différents travaux de recherche, pour certains interdisciplinaires. Il s’adresse aux étudiants et aux chercheurs s’intéressant aux questions de comportements alimentaires, quelle que soit leur discipline.
<div>With the emergence of concepts such as risky behavior and food sustainability, eating habits and how they're changing have become crucial issues for health and the environment. Since the beginning of the XXI(sup)st(/sup) century, food education programs and consumer information initiatives have multiplied in France. However, assessing their real effects remains difficult, as changes in eating habits result from multiple factors that are hard to measure. It is precisely to better address this complexity that the Interdisciplinary Research Collective on Changes in Eating Behaviors (Circca) is proposing new areas of research, combining contributions from the experimental sciences, digital sciences, and the humanities and social sciences: neuroscience, cognitive psychology, sociology, nutritional epidemiology, experimental economics, behavioral modeling, and more.</div><div>This book engages in methodological reflection aimed at understanding changes in eating behaviors in a multidimensional way, through the presentation of various research projects, some of which are interdisciplinary. It is intended for students and researchers interested in issues related to eating behaviors, regardless of their discipline.</div>
