Summary

Rapid urbanization in West Africa has contributed to the development of a small-scale local agricultural product processing and marketing sector. Consumers of these products have a range of quality expectations. However they are all concerned about buying products with some guarantee of sanitary quality or that conform to some form of production standard. Studies of cereals, meat and locust bean paste on the Ouagadougou market have demonstrated how food product quality is constructed.
