New consumption patterns have emerged in the form of 'sustainable' coffees and coffee has become a fashionable drink, with the rapid expansion of coffee bar chains, but coffee producers are receiving an ever-smaller share of the end price. This paradox exists because the “coffee” sold by farmers is increasingly different from the “coffee” bought by consumers. It is not material quality that coffee consumers pay high prices for, but rather symbols and personalized services. To improve their situation, producers need to try to control at least part of this 'immaterial' aspect, for instance through geographical labels and indications of origin
